Enjoy the flavor of the landscape with our pasture-finished beef. Our animals are sourced as young cows and heifers and are turned out on lush spring pasture as soon as the growing season begins. They are moved every day to a different paddock to ensure they ingest a diverse diet and take advantage of the most nutritious plants in our sward. They are also freely offered organic sea salt as a mineral supplement. We carry the animals throughout the summer and into early fall when they are harvested. After harvest, the butchered animal is dry aged for 14 days to allow the meat's natural enzymes to break down the connective tissue, resulting in a more tender steak. This process also causes some of the meat's moisture to evaporate, intensifying the beefy flavor and creating a unique taste and texture. The result is incredibly nutritious meat with a flavor profile unmatched by store-bought and grain-fed beef. In addition, while in our care, butcher animals are never treated with antibiotics or any chemicals that may alter the flavor or health of the meat. Pasture-finished beef is better for the environment and is also a much healthier option than grain-fed beef with higher levels of omega-3 fatty acids, conjugated linoleic acid, certain vitamins and minerals, antioxidants, phytonutrients, and less saturated fat.
